CAPRARI supports the "Il Tortellante" project, the educational workshop launched in 2016 by the Aut Aut association of Modena and inspired by an idea of Chef Massimo Bottura. In this workshop 25 autistic youth aged between 15 and 25 years old work with "sfogline" artisans to make fresh handmade pasta, in particular tortellini, the symbol of our region.
